Its introduction offers general information and advice, as well as 130 recipes that can be made in 30 minutes or less.

Recipes for stir-fried and skillet meals, baked and roasted chicken, and others ranging from formal classics, grilled dishes and salads to soups and chowders are accompanied by photographs and nutritional breakdowns.

With this easy potato and chicken recipe it's suggested that the cook try different varieties of potato -- such as Yukon gold, purple, yellow Finnish or Texas finger potatoes -- to give the dish different flavors and colors.

Potatoes and Chicken

(Preparation 10 minutes, cooking time 20 minutes)

2 tablespoons vegetable oil

8 medium red potatoes, thinly sliced

1 pound boneless, skinless chicken breasts, cut into thin strips

1 medium red bell pepper, cut into thin strips

1 teaspoon garlic salt

Heat oil in 12-inch nonstick skillet over medium heat. Add potatoes, chicken and bell pepper to skillet. Sprinkle with garlic salt. Cook 15 to 20 minutes, stirring frequently, until chicken is no longer pink in center and potatoes are tender. Makes 4 servings.
