Date and Nut Squares
Janet Ciarniello submitted this recipe for squares. She called them a chewy favorite with a nutty flavor, and said "This is a delicious, moist and chewy bar that my mother only made at Christmas. She would wrap them and give to friends and family who looked forward to this once-a-year treat. Now I make them for my friends and family and they are still a huge hit!"
Her recipe makes 16 squares.
Preheat oven to 325 degrees.
Beat until foamy:
2 eggs
Beat in:
1/2 cup sugar
1/2 tsp vanilla
Sift together and stir in:
1/2 cup sifted flour
1/2 tsp baking powder
1/2 tsp salt
Mix in:
1 cup cut-up walnuts (pecans can be substituted)
2 cups finely cup-up dates
Spread in a well greased 8-by-8-by-2 inch square pan. Bake 25 to 30 minutes. Top will have a dull crust. Cut into 2-inch squares while warm, cool. Remove from pan. Dip in confectioner's sugar.
