The Super Bowl has become another one of America's largest food consumption days of the year. While watching the big game, it is fun to enjoy lots of snacks and beverages and cheer on your favorite team.

I am not much of a football enthusiast, but I do like to watch the commercials and cook some snacks for those who do watch the game.

Today I pulled a few recipes from my friends on Facebook to share with you. I don't always know where they got the recipes, but the ones I am sharing today all sounded good to me, including a dessert pizza and a punch. Enjoy the Super Bowl and some great food!

Baked String Cheese Bites

1 package light string cheese

Milk

Seasoned breadcrumbs

Marinara sauce

* Unwrap string cheese from plastic wrappers. Cut each cheese into 3 or 4 pieces, making bite-sized chunks. Dip each piece into milk and roll into seasoned breadcrumbs. Place on a parchment-lined baking sheet. Bake at 425 degrees for 8 to 10 minutes. Heat marinara sauce and place in serving bowl. When cheese bites are hot through and light crusty brown, remove from oven and serve with heated marinara sauce.

Mexican Corn Dip

2 cans Mexi-corn, drained

1 can Ro-Tel tomatoes and green chilies, drained

2 cups shredded cheddar

6 green onions, sliced

1 cup mayonnaise

1 cup sour cream

* Drain corn and tomatoes from liquid and place in a mixing bowl. Add remaining ingredients and stir well, until combined. Serve with tortilla chips or scoop-type chips.

Three-Cheese Bacon Dip

This dip is an incredibly tasty appetizer, is super easy to make and great for Super Bowl parties.

16 ounces low-fat cottage cheese

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

8 slices bacon, cooked and crumbled (6 for the dip and 2 for the topping)

3 green onions, sliced (2 for the dip, 1 for the topping)

Tortilla chips for dipping

* Preheat oven to 350 degrees. Set aside 2 slices of cooked and crumbled bacon and 1 sliced green onion to use as topping after the dip is baked

* In a medium bowl, combine all of the ingredients. Spoon the mixture into a 1 or 11/2 quart glass baking dish. Bake at 350 degrees for 25-30 minutes. Top with the reserved bacon and green onions and let sit 10 minutes before serving. Serve with tortilla chips.

* Preheat oven to 350 degrees. If using crescent rolls: Unroll dough; separate into 2 long rectangles. Press each into 12x4-inch rectangle, firmly pressing perforations to seal. If using dough sheet: Unroll dough; cut lengthwise into 2 long rectangles. Press each into 12x4-inch rectangle.

* Spread 2 tablespoons of sour cream over each rectangle. Sprinkle each with half of the shredded chicken, cheese, and green onions. Starting with one short side, roll up each rectangle and press the edge to seal. Using a serrated knife, cut each roll into 8 slices and place cut side down on an ungreased parchment lined cookie sheet. Bake 12 to 17 minutes or until edges are deep golden brown. Immediately remove from cookie sheet. Serve warm and with salsa for dipping, if desired.

Chocolate Chip Pizza

Baking pan, approximately 10×15 inches

1 thin pizza crust in a can

2 sticks of butter, melted

1 box of yellow cake mix

1 bag of chocolate chips

1/4 cup brown sugar

1/4 cup granulated sugar

* Preheat oven to 400 degrees. Spread crust on pan, and create a 1/2 inch lip of dough around edge. Follow can instructions for prebaking crust. In a bowl, stir together granulated and brown sugars with a fork, breaking up any lumps. If crust has air bubbles in it after prebaking, puncture with a fork.

* After removing crust from oven, mix together butter and yellow cake mix (there may be lumps). Spread mixture onto crust (with hands, if needed), leaving approximately 1/2-inch from the edges without batter.

* Sprinkle approximately 3/4 of the bag of chocolate chips on top of batter (more, if desired.) Gently press chips into batter.

* Sprinkle sugar topping over pizza, covering batter and chips but avoiding the lip of the pizza, you may not need all the sugar, but it looks like a lot when you put it on, then the dough expands while baking, making bare spots so use more than you think you will need.

* Bake 7-12 minutes on upper middle rack of oven. If after 12 minutes the topping has not browned, switch oven to broiler for approximately 1 minute, but don't walk away or you risk burning the top of the pizza. Cool 5 minutes, cut and enjoy.

Reeses Krispies

1 cup sugar

1 cup corn syrup

1 1/3 cup creamy peanut butter

4 1/4 cups crispy rice cereal

1 pinch of salt

4 Reese's peanut butter cups, chopped

1 handful chocolate chips

* In a large sauce pan over medium heat, melt the sugar, corn syrup, and peanut butter until smooth and evenly combined remove from heat. Quickly add the salt and cereal and stir to combine thoroughly. Add the chocolate chips and stir again. Wait about 1 minute and add the candy, quickly folding the mixture together so as to not smash up the candy. Line a baking sheet with parchment paper and drop rounded tablespoons onto the sheet. Let cool and enjoy.

Strawberry Punch

1 can (46 ounces) pineapple juice, chilled

2 1/4 cups water

3/4 cup thawed pink lemonade concentrate

3/4 cup sugar

1 quart strawberry ice cream

2 1/2 quarts ginger ale, chilled

1 pint fresh strawberries

* In a punch bowl, combine the first four ingredients. Add ice cream; stir gently. Add ginger ale; stir gently. Cut fresh strawberries and add to punch. Serve immediately. Yield: 6 quarts.

Have a great week, and until next time, may your team win and happy cooking.
