Shopping the farmers market this spring? Liven up your veggies with these healthy, easy-to-make salad dressings:

Miso-Ginger Dressing

Submitted by Becky Brown of Natural Health Organic Foods in Cape Girardeau

Ingredients:

3/4 cup water

1 tablespoon tahini (sesame paste)

2 cloves chopped garlic

1 teaspoon fresh chopped ginger

1 tablespoon fresh lemon juice

3 tablespoons flax oil

Directions:

Combine the first five ingredients in a blender and mix. With the blender running, slowly add the flax oil and blend until creamy.

Creamy Cilantro-Avocado Dressing

Ingredients:

1/2 ripe avocado

3/4 cup packed fresh cilantro

1/2 cup nonfat plain yogurt

2 scallions, chopped

1 clove garlic, quartered

1 tablespoon lime juice

1/2 teaspoon sugar

1/2 teaspoon salt

Directions:

Place avocado, cilantro, yogurt, scallions, garlic, lime juice, sugar and salt in a blender; blend until smooth.

Tomato Herb Salad Dressing

Ingredients:

1 1/2 cups low-sodium tomato juice

1/4 cup chopped onion

2 tablespoons chopped green pepper

3 teaspoons sugar

2 teaspoons lemon juice

1 teaspoon garlic salt

1 teaspoon Worcestershire sauce

3/4 teaspoon dried basil

1/4 teaspoon dried marjoram

1/4 teaspoon dried savory

1/4 teaspoon celery seed

1 tablespoon canola oil

Directions:

Place all ingredients in a blender; cover and process until smooth. Chill for at least four hours before serving.

Maple Dijon Dressing

Ingredients:

1/4 cup unfiltered apple juice

2 tablespoons apple cider vinegar

1 tablespoon maple syrup

2 tablespoons Dijon-style mustard

1/4 cup grapeseed oil

Directions:

Combine the first four ingredients in a blender. With the blender running, slowing drizzle in the grapeseed oil and blend until creamy. This dressing goes especially well with a spinach salad.
