Here's a wonderful, easy to do main dish, that everyone will rave about. It's surprisingly good. And you may have the ingredients in your kitchen or garden. It makes a meal, with only a salad to go with it. (You don't miss the meat, if you choose to do it alone.)
INGREDIENTS:
2 T oil
2 T cornmeal
1/4 c. chopped onion
1/4 c. chopped green/red pepper
4 c. chunked potaoes, with part skin on, if using red
4 c. chunked sweet potatoes
1 tsp. salt
1/4 tsp. black pepper
HEAT OIL JUST UNTIL HOT, ADD CORNMEAL TO LIGHTLY BROWN;
ADD OTHER INGREDIENTS, COVER, SAUTE ON MED. LOW UNTIL JUST TENDER, ABOUT 45 MINUTES. TURN SEVERAL TIMES AS IT BROWNS.
Serves 6-8
