The Best Sugar Cookies

2 1/4 cup margarine (Imperial works best)

2 1/4 cup sugar

6 eggs

3 tsp. vanilla

8 1/4 cup flour

6 tsp. baking powder

Preheat oven to 400 degrees. Cream butter and sugar. Beat in eggs and vanilla. Add baking powder and flour, one cup at a time mixing until blended but do not overmix. The dough may be stiff and necessary to blend the last flour in by hand. Do not chill dough. Place part of dough on floured surface and roll to about 1/4 -1/2 inch thickness. I like mine thick. Bake cookies for 7 to 10 minutes. Do not overbake. I do not like for mine to get brown except for maybe just around the edges. I use an airbake cookie sheet and bake for 9 minutes in a gas oven.

Quick-Pour Icing Recipe

10 cups sifted powdered sugar (1 to 2 pound bag plus 1 cup)

3/4 cup water

3 Tbls light corn syrup

1 1/2 tsp. almond extract

Food color as desired

Place sugar in a saucepan. Combine water and corn syrup. Add to sugar and stir until well mixed. Place over low heat. Do not allow temperature of icing to exceed 100 degrees. Remove from heat, stir in flavor and food color. Dip top side of cookies in icing. Let excess drip off and place on waxed paper and let dry completely. You may add sprinkles while still wet but my favorite is to let dry completely and decorate with edible markers.
