Chicago-style pizzeria comes to Cape Girardeau

For those who love a slice of Chicago-style pizza and a scoop of homemade ice cream, Pizzeria Adagio and Rolling Fog Creamery could satisfy your hunger for two of America's most popular food items. Founded by the husband and wife team of Brian and Gretchen Probst, the restaurant located at 503 Cadmium Lane between Gordonville and Cape Girardeau held its grand opening Friday and Saturday.
The couple plan to operate the eatery on Fridays and Saturdays from 4 to 9 p.m. while they keep their teaching jobs in the Cape Girardeau Public School District. Brian Probst said that while he is excited to open the restaurant, he has no plans of retiring from teaching anytime soon. Since the couple teach in the school system, it was only natural they incorporated their love for food and education into the restaurant's name and method of preparing ice cream. Brian Probst teaches science and created the ice cream using a nitrogen freezing process he said is used by other restaurants in the United States. For those familiar with musical terms, Adagio stands for slow and steady. "This has been something that we've been interested in for about 10 years," he said. So, what is chicago style pizza?
True Chicago-style pizza features a buttery crust, generous amounts of cheese and chunky tomato sauce. It happens to be a favorite of mine, but I also prefer the Chicago-style hot dog to anything else. I'm a Chicagoan at heart!
Are they selling this out of their house. Maybe another reason to pursue county wide zoning.
Have to question the wisdom of a restaurant that is only open 10 hours a week and is located on a residential lane off of a couple county roads. Even if the pizza & ice cream are the best around those are huge negatives to overcome.

A Chicago-style hot dog includes tomatoes, mustard, onions, relish and a pickle on a poppy seed bun. You should try one sometime and let me know what you think.

A Chicago style hot dog is one of the best things I've ever eaten, but I'm a hot dog fan. The relish is not like regular relish. It is bright green, and as far as I know, you can't buy it anywhere around here. The dogs themselves are Vienna Beef and are usually boiled, not rotissieried. The dog has this relish, two fresh tomato wedges, a couple of whole little long peppers, and mustard all on a poppyseed bun. I've heard the only Chicago dog place around here is in Anna, IL, but I haven't been there yet. The best place in Chicago that I've found is Mickey's out by the airport. You can get a dog, half a pound of fries, and a large drink for about $4.50. You can't beat it.

Also, I think the kind of folding pizza you're referring to is New York style.
To those who seem to be against the idea of this new business, what's your deal? There's so much talk about how big companies don't care about the consumer, which is probably mostly true, so why would anyone start slamming these people for trying to bring something new here? Have you tried the pizza or ice cream? Don't knock a new business unless you've been there and the food was crappy or you were treated rudely. It might be the best pizza you've ever had.
Lou Malnatis' is some great pizza, probably the best I've ever had. I'm going to Chicago next weekend to watch a Cubs game and I have plans on stopping by and getting some pizza before heading back to Cape. I think I'll give the "hometown style deep dish" pizza a shot and see if they compare to the original deep dish pizza.

As with any new business, I wish them luck (it takes a lot of guts to put your name & money on the line & actually do something other than talk).
Nil does have a point that it may be an uphill battle. Sometimes you have to bite the bullet and pay more to get a location that will give you the best chance for success. It goes back to basic economics & sometimes a bigger investment is needed to increase the likelihood of a bigger return.
As a fellow small business owner I wish them the best of luck. I have found if you have a good product, good service and reasonable prices, people will come to you, no matter how far off the beaten path you are. Since this business is obviously not their sole source of income, I see nothing wrong with only being open a few hours a week. Good luck to you!

I am also going to Chicago this weekend and plan on going to Malnatis and the Cubs game on Saturday. I love the Chicago style pizza and cant wait to have the best of the best.
When are we going to get someone that knows what a real"Italian Beef" sandwich is now?
Falconman....root hard for the Cubbies on Sat and save me some pizza. I'm leaving Cape on Sat, but won't be in Chi-town until Mon morning and me and some buddies of mine are going to the Cubs-Astros game on Mon night. Then its pizza Tues before heading back to Cape.
Brian ...I'm a chicagoan my self . The fact of the matter is , Its very hard to get a '' real '' italian beef sandwich or vienna beef hot dog or chicago style deep dish pizza . There is a place in Anna Illinois called Connies and let me tell you . IT IS WONDERFUL !!!!!!!!!!!! Everything on the menu is SUPERB!!! and its really CHICAGO STYLE . You should give them a try. Located at 1215 e Vienna street in Anna 618-833-3747 My favorite on the menu is the Italian Beef with sweet and hot peppers (dipped) They have everything from Corned Beef , Gyros , Polish , Pizza puffs , ribbon fries , and thats only a few great things on the menu . Give them a try !!!!!

Aweful, I love Chicago pizza but this wasn't it. I am glad they didn't quit their day job. As far as pizza places if you could authenticate the Chicago pizza, beef, sausages and dogs and combine it with a Girtie's Ice cream parlor you'd have a gold mine.
I doubt any of you will read this, but you people are way too negative. All of you people who are predicting doom for this restaurant probably aren't gutsy enough to get in the game and open your own business.
I've been to Pizzaria Adagio, and I love it. I think it TRAMPLES every other Pizza in the area, including Pagliaia's. However, I don't think using the phrase "Chicago Style" is very smart, because it's not Chicago style, and the only thing that's going to do is make fans of Chicago style pizza resent it.
Decided to give this place a try. Don't go unless you have all night!! We waited an hour and a half on our pizza! Don't get me wrong, the pizza was okay (but definitely not worth the wait!). It might have been better if we had gotten it in a more reasonable time frame and if there had actually been someone there who seemed to care. We had to flag someone down for soda refills and the poor boy had to be reminded more than once what we were drinking. Ever hear of a pad of paper? Would love to have tried the ice cream but I didn't have all night. Something needs to change or no one is going to want to drive out of the way for the experience we had tonight.
Hello all! This is Gretchen, co-owner of Pizzeria Adagio. Opening the pizzeria has been a dream of ours for a while.
My husband realized as soon as he hung up the phone with Brian Blackwell that he misspoke about "Chicago-style" pizza. Yes, we're deep dish, but I must say that no, we're NOT "Chicago-style." Our pizzas are made with made-from-scratch dough pressed up the sides of the pan (as far as it will go--if it's humid, it doesn't like to stick as well), and then our made-from-scratch sauce goes next, then we layer toppings, a generous amount of cheese, and more toppings.
We realize we're a bit out of the way, but we're really 5-10 minutes from either Wal-Mart (Cape or Jackson). We're also working on getting signs so people don't get lost, or you can always call for directions (phone number on website.) And this is a temporary location--we're planning to move into town as soon as we can afford it.
We're working to have a restaurant that we would love to go to and focus on customer service. At the moment, it's been difficult with only us and some family and friends helping out. We're looking for some permanent employees to make sure customers get their refills and we don't have to stop to do something else and can focus on getting those pizzas and ice cream out faster.
If, however, you go to Chicago, (from my experiences anyway) you could wait 30-60 minutes for a table, then have a server and then wait about 45 minutes or more for your pizza.
Being deep dish pizza, it takes a good half hour for them to bake properly, and if we get piled up with orders, it'll be longer. If you don't want to wait with the company you're bringing to the pizzeria, call in your order to cut down on your wait. If you're really in a hurry, then call Papa John's for delivery. :)
Feel free to ask questions if you have them and I'll check periodically and answer. :) We want our customers to be happy (and a lot of them are--this blog seems to bring out the critics which is good. We want to improve since we're new at this.)
Hello everyone! I am that poor boy from pizzeria adagio and I am doing the best I can. As of today, Sept. 7, 2008, I have worked there a total of 3 nights, which is also the only experience of working in a restaurant that I have. It is hard to remember what each person is drinking so I ask because I do not want to give someone the wrong drink or give them another person's drink. Thank you for the comments I will try to remember what people are drinking but I'll ask if I can't remember.
The first time I tried, I could not even find the place. I called the second time to get directions. What a horrible location and the gravel road needs fixed. I wish I would never have wasted my time. It was absolutely disgusting and took FOREVER....I will never go back and will not recommed it to anyone...By the way, thanks for the suggestion to call Papa John's. I will do just that.
