Glenda's Strawberry Cream Angel Food Cake
My sister-in-law, Glenda Nations, recently made this elegant dessert and received rave reviews. I've included the angel food cake recipe to encourage you not to use a cake mix! The link, to Emeril's cake is below, but we prefer using this tried and true angel food cake recipe. Happy Easter ~ Happy Baking!
Heavenly Angel Food Cake
1 cup cake flour
1 1/2 cup powdered sugar
1 1/2 cup egg whites
1 1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup sugar
1 teaspoon vanilla
Sift together flour and powdered sugar 3 times. Set aside. Beat egg whites, cream of tartar, and salt until foamy. Add 1 tablespoon sugar at a time and beat until very stiff. Fold in vanilla. Sift one-fourth of flour and powdered sugar mixture in at a time and fold gently. Pour in pan.
Bake at 375 degrees for 30 to 35 minutes.
A note about the icing: Glenda used 2 cups of heavy cream, at least 4 Tablespoons of powdered sugar and 1 teaspoon of almond extract.
